Enclosed is the Special Permit for the events planned for Aug. 16, 2014 with a rain date
of Sept. 27, 2014. A duplicate of this permit must be continuously posted during the event. This
permit is granted as applied for, based on information supplied in the application.
There are several conditions written into the permit. Please be aware that under the State
Fire Code, the number of persons occupying the building and/or tent area is limited. The use of a
tent will require an application and approvals at least three days before the event, from the
Building Department. A Town Building Inspector must inspect the tent, before occupancy, they
can be reached at 765-1802 between the hours of 8 a.m. and 4 p.m.
This permit does not authorize parking on Suffolk County Right of Way located in front of the
property or any lands owned by County of Suffolk, Town of Southold or Peconic Land Trust. All
parking and traffic controls are the responsibilities of the event operators, and their agents. Note
that parking on any County or State Roads are not authorized under this permit. Any violations
of this permit can be cause for revocation. The Town also reserves the right to revoke any permit
or deny future permits if the event(s) generates unforeseen impacts to the health, safety or welfare
of residents and guests of the Town.

A Parking/Event Plan may be a survey, site plan and/or aerial view (for example Google Earth) of
the subject property. INDICATE ON THE PLAN ALL of the following information:
A parking/event plan showing:
(1) The size of the property and its location in relation to abutting streets or highways.
(2) The size and location of any existing building(s) or structure(s) that will be in operation
during the course of the event and any proposed building, structure, or signs to be erected
temporarily for the event.
(3) The location of the stage or tents, if any.
(4) The designated areas of use for spectators, exhibitors, vendors, employees and
organizers.
(5) Location of all exits.
(6) The location of all fire extinguishers and other fire safety equipment.
(7) The location of all temporary utilities to be installed for the event, if any.
(8) The layout of any parking area for automobiles and other vehicles and the means of
ingress and egress for such parking areas. The parking spaces must allow for 300 sq. ft.
per car.
(9) A traffic control plan for vehicles entering and leaving the site for the proposed event.
(10) Plan for the use of live outdoor music, loudspeakers and other sounds which will be used,
if any, and the type and location of speakers and other audio equipment.
(11) A description of emergency access and facilities related to the event.
(12) Provisions to dispose of any garbage, trash, rubbish or other refuse.
(13) Location and description of any additional lighting to be utilized in conjunction with the
event.
(14) Location of sanitary facilities on site.
'Traffic Control Plan
Events for three hundred (300) or more people also require submission and approval of a traffic control plan,
acceptable to the Town of Southold, AND as gualified traffic controller must be provided. Please attached a written
description and/or notate on the parking event plan the following: 1. who will be conducting traffic, 2. where they
will be stationed on site, 3. how they will direct the entrance, circulation, parking, and exiting of cars on site, and
4. contact information for use by Southold Town Police.

PERMISSION IS HEREBY GRANTED, SUBJECT TO THE FOLLOWING CONDITIONS:
1. By acceptance of this permit, applicant agrees to adequately supervise and direct all parking to be on the
premises or at another site, and to provide parking assistants and any additional traffic controls necessary for this
event. Parking is strictly prohibited on ANY Town, County or State Roads or Rights of Way.
2. Traffic control at events for three hundred (300) or more people shall be provided by a qualified traffic controller
in accordance with the attached, approved traffic control plan.
3. One "on -premises" sign not larger than six (6) square feet in size may be displayed not longer than thirty (30)
days before this event, and removed immediately after the event. Directional parking signs shall be adequately
displayed.
4. Applicant indemnifies and holds harmless the Town of Southold from all claims, damages, expenses, suits and
losses including but not limited to attorney's fees arising from activities under this permit.
5. Tent proposals must receive permit approval from the Southold Town Building Inspector before placement on
,the property and must meet all fire and safety codes.
6. This permit is valid only for the time, date, place and use specified above, and for the designated event. Each
additional day will require a separate permit application, fee, and related documents for review, etc. at least 60
business days prior to the scheduled event.
7. Adequate temporary sanitary facilities must be provided by applicant for this event and applicant agrees to
remove the temporary facilities from the premises within 48 hours after the day of the event.
8. On-site food preparation is NOT permitted, although food may be catered subject to all Suffolk County
Department of Health regulations.
9. NO activities associated with this event, including but not limited to parking, ingress/egress/access, tent(s) or
temporary structures) or temporary sanitary facilities shall be conducted on Town of Southold Purchase of
Development Rights land.
10. NO activities associated with this event including but not limited to parking, ingress/egress/access, tent(s) or
temporary structure(s) or temporary sanitary facilities shall be conducted on Suffolk County Purchase of
Development Rights land without a permit issued by the Suffolk County Farmland Committee.
11. Issuance of this permit does not authorize in any manner the occupancy of any building exceeding the legal
limitations under the fire code or other codes which would prohibit such increased occupancy.
12. Access shall be provided for emergency vehicles, to all public assembly areas, all buildings, all work areas and
any additional area where emergencies may occur. Two emergency -fire exits and exit paths from the building(s) on
the property, to a public way or remote safe area, shall remain open and unobstructed at all times.
13. Owner assures that all fire, safety, building, and other laws will be complied with.
14. Music, when outdoors, is required to stop at the time specified in the permit. Placement of the speakers must be
in a location that affords the greatest protection from noise intrusion upon adjacent properties.

FARMLAND COMMITTEE, PURSUANT TO CHAPTER 8 OF
THE SUFFOLK COUNTY ADMINISTRATIVE LOCAL LAWS,
APPROVING A SPECIAL USE PERMIT TO CONDUCT A
SPECIAL EVENT ON THE DORSET FARMS, INC. PROPERTY
(TAX MAP NUMBER 1000-085.00-02.00-017.002), TO WHICH
THE COUNTY OF SUFFOLK OWNS THE DEVELOPMENT
RIGHTS
WHEREAS, pursuant to Chapter 8 of the Suffolk County Administrative Local Laws ("Chapter 8"), a
proposal to conduct a special event on the property currently owned by Dorset Farms, Inc. has been
received by the Suffolk County Farmland Committee (`Committee"), where such proposal is known by
application number 2014006; and
WHEREAS, the property owned by Dorset Farms, Inc., is known as "The Lenz Winery" and is located
on land situated on north side of Main Road (S.R. 25), south of Middle Road, east of Bridge Lane, and
west of Mill Road in the hamlet of Peconic, Town of Southold, identified by Suffolk County Real
Property Tax Map ("SCRPTM") number 1000-085.00-02.00-017.002 (`premises"); and
WHEREAS, the applicant seeks a Special Use Permit to conduct a special event, known as Dinner in the
Vines, designed to promote and educate the public on the abundance of local agricultural products
available on the East End of Long Island; and
WHEREAS, said application was considered by the Committee at its meeting on July 22, 2014; now,
therefore, be it
1" RESOLVED, that the Committee hereby finds and determines that this proposal constitutes a Type II
action pursuant to 6 NYCRR §617.5(c)(3), which completes the SEQRA review; and
2nd RESOLVED, that the Committee hereby approves and adopts the report of its staff, as may be
amended; and be it further
3r" RESOLVED, that the Committee hereby approves said application, subject to the following
conditions:
1. The special use permit shall be valid on either August 16, 2014 or September 27, 2014, only; and
2. The Dinner in the Vines special event shall be conducted in accordance with the proposal
received by the Suffolk County Department of Economic Development and Planning, Division of
Planning and Environment, on May 19, 2014; and
3. No parking in association with the special event shall be permitted on the premises; and
4. The Dinner in the Vines special event shall not adversely impact the viability of the agricultural
operation and/or the associated natural resources; and
5. The landowner shall be responsible for compliance with all conditions of Farmland Committee
Resolution No. FC -17-2014, the deed of development rights, the contract of sale, and all
applicable federal, state, county, and town regulations, rules and statutes.

EVENT DESCRIPTION
E
Dinner in the Vines is an event designed to promote and educate the public as to the sheer
abundance of local agricultural products available on the East End of Long Island.
Local Chef Noah Schwartz creates a seasonal menu featuring local ingredients and paired with
Lenz wine. We then literally place the people in the middle of the farm where the grapes that
made the wine they are drinking with dinner are grown.
We have chosen a portion of the field that is far enough away from the main road and away from
other buildings to further insulate them from everything but the land from which their food
comes.
EDUCATIONAL ELEMENTS OF THE EVENT
■ Vineyard Tour focuses on changes in vineyard practices over the years, things we have
learned through collaboration with other vineyard managers and Alice Wise, trellis
systems, sustainable vs. organic farming practices, basic terminology (veraison, spur
pruning, etc), and the dance that happens each harvest between the vineyard manager
who wants to bring the crop in and the winemaker who wants to have the grape hang just
a little bit longer.
■ So much focus is placed on the winery part of our identity that it is often overlooked that
we are a FARM winery. This event literally places the guests within the context of their
food and wine.
■ Ingredients for the dinner are sourced from local farms, fisheries, poultry farms, etc.
■ Seasonal Menu — in general people have no idea what is available seasonally. With
supermarkets and refrigerated trucks we think nothing of having strawberries in
December. Seasonal is the ultimate example of what it means to be a locavore!
IMPACT TO PROPERTY
The event is designed to have a very limited impact on the property:
■ For parking, we use our neighbor's field —Otto Kiel, owner —field just adjacent to the west
of our property.
■ Guests walk along the tractor paths, not in between the vines.
■ Table is set up in the clearing between vineyard blocks
■ Table is one long continuous farm -style table — idea is to mimic a picnic
■ Small kitchen area is setup in another small clearing alongside the tractor path.

EVENT SCHEDULE
5:00pm: Guests arrive at The Lenz Winery and are served a glass of the Lenz Cuv6e
(sparkling wine).
5:30pm: Sam McCullough, Lenz Vineyard Manager, takes the guests on a tour of the
vineyard which ends at the dinner site.
6:15pm: Dinner begins. Courses and Wines presented by Chef Noah Schwartz &
Winemaker Eric Fry.
8:30pm: Guests return to the Lenz Tasting Room for some Aldo's Coffee (local coffee
roaster) to end the evening.
