A duplicate of this permit must be continuously posted during the event. This permit is granted as applied for, based on information supplied in the application. There are several conditions written into the permit. Please be aware that under the State Fire Code, the number of persons occupying the building and/or tent area is limited. The use of a tent will require an application and approvals at least three days before the event, from the Building Department. A Town Building Inspector must inspect the tent, before occupancy, they can be reached at 765-1802 between the hours of 8 a.m. and 4 p.m. This permit does not authorize parking on Suffolk County Right of Way located in front of the property or any lands owned by County of Suffolk, Town of gouthold or Peconic Land Trust. All parking and lraffic controls are the responsibilities of the winery owner, the event operators, and their agents. By acceptance of this permit, applicant agrees to adequately supervise and direct all parking to be on the winery premises or at another site, and to provide parking assistants and any additional traffic controls necessary for this event. Tent proposals must receive permit approval from the Southold Town Building Inspector before placement on the property and must meet all fire and safety codes. 6. Tills permit is valid only for the time, date, place and use specified above, and for the designated event. Each additional day will require a separate permit application, fee, and related documents for rev ew, etc. at ~least 30 business days prior to the scheduled event. 7. Adequate temporary sanitary facilities must be provided by applicant for this event and applicant agrees to remove the temporary facilities .from the premises within 48 hours afier the day of the event. 8. On-site food preparation is NOT permitted, although food may be catered subject to all Suffolk County Department of Health regulations. 9. Two emergency-fire exits and exit paths from the building(s) on the property, to a public way or remote safe area, shall remain open and unobstructed at all times. 13. Music, when outdoors, is required to stop at the time specified in the permit. Placement of the speakers must be approved by the winery management in a location that affords the greatest protection fi.om noise intrusion upon adjacent properties. 14. Where possible, live bands rather than disc jockeys will be encouraged. When disc jockeys are used, the decibel levels will be monitored to ensure acceptable levels. 15. Organizers of the events will be required to use an approved disc jockey recommended by the winery or have their own disc jockey sign a contract agreeing to the above. If they do not honor the contract, the winery will have the right to remove the disc jockey from the premises. 16. Owner assures that all fire, safety, building, and other laws will be complied with. 17. Local Chef, Andrea Glick, creates a seasonal menu featuring local ingredients and paired with Lenz wine. We then literally place the people in the middle of the farm where the grapes that made the wine they are drinking with dinner are grown. We have chosen a portion of the field that is far enough away from the main road and away from other buildings to further insulate them from everything but the land from which their food comes. EDUCATIONAL ELEMENTS OF THE EVENT · Vineyard Tour focuses on changes in vineyard practices over the years, things we have learned through collaboration with other vineyard managers and Alice Wise, trellis systems, sustainable vs. organic farming practices, basic terminology (veraison, spur pruning, etc), and the dance that happens each harvest between the vineyard manager who wants to bring the crop in and the winemaker who wants to have the grape hang just a little bit longer. · So much focus is placed on the winery part of our identity that it is often overlooked that we are a FARM winery. This event literally places the guests within the context of their food and wine. · Ingredients for the dinner are sourced from local farms, fisheries, poultry farms, etc. · Seasonal Menu - in general people have no idea what is available seasonally. With supermarkets and refrigerated trucks we think nothing of having strawberries in December. Seasonal is the ultimate example of what it means to be a Iocavore! PO BOX 28 PECONIC, NY 11958 631.734.6010 IMPACT TO PROPERTY The event is designed to have avery limited impact on the property: · For parking, we use our neighbor's field - Otto Kiel, owner- field just adjacent to the west of our property. · Guests walk along the tractor paths, not in between the vines. · Table is set up in the clearing between vineyard blocks · Table is one long continuous farm-style table - idea is to mimic a picnic · Small kitchen area is set up in another small clearing alongside the tractor path. EVENT SCHEDULE 5:00pm: Guests arrive at The Lenz Winery where a selection of local farmstand fruits and cheeses are served with a glass of the Lenz Cuv~e (sparkling wine). 5:15pm: Sam McCullough, Lenz Vineyard Manager, takes the guests on a tour of the vineyard which ends at the dinner site. 6:30pm: Dinner begins. Courses and Wines presented by Chef Andrea Glick and Winemaker Eric Fry. 8:30pm: Guests return to the Lenz Tasting Room for some AIdo's Coffee (local coffee roaster) to end the evening.
