Dear Mr. Stewart
This is in reference to your letter to the Planning Board of March 11,
1996, requesting guidance in establishing your seasonal outdoor grill.
We have been informed by the Building Department that they have been in
touch with you in this matter and that you will file an application with
them so they can make a decision in this matter.
We will be happy to work with you once the Building Department has made
its decision.

RE: addition of seasonal outdoor grill
Dear Sirs,
In accordance with my conversaitons with the building department, I am applying
to your body for permission (or confirmation of permitted use) for what may be
considered an intensification of use of our restaurant. It is our intention to build an
outdoor gazebo grill for lunches during the season. Said grill would be on wheels and
placed (and removed) on a dayly basis (approximately 11:00 am to 5:00pm) in our
parking lot. There would be no seating at the grill, nor would any drive-thru be allowed.
The grill would be removed from our parking lot before dinner so as not to interfere with
our parking spaces. The only signage involved would be on the gazebo itself and would
be in keeping with the character and image of the restaurant This grill will be covered by
a roof and screen enclosed on the sides as required by the Suffolk County Department of
Health with whom we are obtaining the necessary permits. All food preparation will be
done in our main kitchen.
It is our intention to sell the following foods from the grill: hot dogs, souvlaki
(fully precooked gyro meat), pre-prepared salads (in clear clamshells) and canned or
bottled sodas.
I have attached a copy of our plan for the grill. I trust that you willfind all in
order as the season is rapidly approaching (at least according to the calender, if not the
weather).
