The Planning Board has received the attached letter from
An inspection of the premises on August 29, 2001, showed that construction work was
proceeding in the interior of the building.
A restaurant is a permitted use in this zone and adequate parking is provided by the
municipal parking lot in the rear of the building.
It is my understanding that no changes will be made to the exterior of the building except
for new signage.
There is some concern about handicapped access to the building. There is a ramp at the
rear of the building, however it enters the building through an area that might not be open
to the public.
Do you have any plans for this building or do they need a permit for the imerior work7
Health Department review for the restaurant use will be required.
It is my feeling that a site plan might not be required. We ask for your decision ifa site
plan is required.

I am writing in reference to explain the type of business I would like to establish in the town
of Southold at 105 Love Lane, Mattituck (S.C. Tax Map # 1000-141-04-3L6).
My wife and I have just newly purchased the building at 105 Love Lane, Mattituck and we
are excited about joining the community and so are our t~vo children. We have been present
at your "work sessions" at town hall and have similar concerns.
Our business at the "Village Cheese Shop", is about selling "Great Food". I personally have
been involved with this business for 22 years, from sweeping the floors, filling the soda cases
and managing the staff. We have a successful business that keeps growing year to year but I
would like to take it to a new level. After coming to the North Fork for many years, I felt
that my business would compliment the local wine industry.
In keeping with that thought, we would like to incorporate a cafe-type atmosphere, in which
our customers would not only purchase cheese, specialty meats, breads and shelf items to
take home, but we would like to serve them small cheese plates along with the local wines.
In creating this space, we would need to provide caf~ tables and chairs in the "green house"
portion of the premises. We also need to discuss the bathroom and handicap issues, if any
