We continue to experience a significant delay in getting approval from the Suffolk County Dept. of Health Services, which is giving the project a very thorough and exhaustive review. We have answered all their questions, but, unfortunately, cannot determine when to expect their permit. When we eventually receive it, we understand your site plan approval will become final. In the meantime, my client, Bob Pellegrini, is eager to begin part of the project, a small part which does not include any sanitary work. There is an existing Crush Pad which is located at the basement level on the east side of the building. This area is used for crushing grapes at harvest time and for bottling wine with the mobile bottling line. Since it is open to the sky, these operations cannot happen in inclement weather. This phase of the project involves building walls and a roof over this crush pad, which will make the winery's functioning more efficient. Existing water, drainage, and sanitary issues in this area will remain unaffected. Enclosed you will find drawings illustrating this proposal.
