Dear Mr. Ward:
On behalf of myself and my partner, Ginger Tomaszewski, we are
inquiring about opening an ice cream parlor at 28080 Main Road,
Cutchogue. Enclosed, you will find a copy of the location we are
inquiring about.
On Wednesday, February 28th, we spoke to Mr. Robert Kassner at
the Southold Town Hall. Mr. Kassner informed us that we needed to
write a proposal letter to the Town Board on how we plan to operate
our business. What my partner and I are proposing, is that we would
like to open an "Old Fashioned" ice cream parlor. We are going to make
our store very quaint and nostalgic, so that, we'll be an asset to the
community of Cutchogue. We also feel that this is the most ideal
location in Cutchogue, because of the fact, that there are so many
streets around the store front, besides Rte.25, that provide adequate
parking. Cutchogue does not have an ice cream parlor at this time and
we feel our store would be very desirable for our customers and their
families to enjoy ice cream in an old fashioned setting.
In regard to what needs to be done in order for us to operate our
business, is painting and laying down linoleum inside the store. The
sign on the front of the store will be purchased at the North Fork Sign
Company. Our machines will be purchased brand new from Electro-Freeze
in Farmingdale and are being professionally installed by them. The
machines that we will be installing, will be a soft ice cream maker
which offers two flavors. We will have a display cabinet for the hard
ice cream, which will be equipped with a dipping well for the scoops,
a slush machine, a shake machine, and also a hot and cold topping dis-
penser unit.
What Ginger and I will be selling, will be hard and soft ice cream
in an assortment of flavors. We will also offer a variety of hot and
cold toppings, including, nuts,. sprinkles, fruit toppings, candy toppings
and also hot toppings. Other items, would be ice cre~ sundaes, slushes
and shakes.

In concluding this letter, we are complying with all Department
of Health needs and we would also like to know from the Town Board
what else should be done in order to open our store.
