zqAlong with a completed Application for Building Permit and a $50 check, I
am including a brief description of the project as verbally suggested
Monday.
My goal is to minimally renovate the empty and unused barn at the
Founders Marina into a simple Oyster Shack. We would do no cooking in
the facility, simply shuck raw oysters and serve wine. Additionally, outdoors
of the Oyster Shack, we would grill a sausage. Huitre et crepinette is a
famous oyster dish served in the Bordeaux region of France: raw oysters,
grilled sausage, bread and red wine.
Along with a grill, outside of the Oyster Shack, we would have tables with
sunshades and minimal lighting for the evening hours. Inside we plan
seating, a wine bar, sinks, and a walk-in cooler to store the live oysters, and
a bathroom. Paper plates and disposable utensils will be used to minimize
dish washing. Local artist Michael Combs will decorate the interior with his
sculptures of water fowl. Those will be offered for sale.
Widows Hole Oysters began the revival of the Greenport oyster farming 15
years ago and sells 99% of its crop to the finest restaurants in Manhattan.
We plan to bring our oysters to Southold in a simple and elegant manner.
