If food is to be served, it must be catered and prepared off-site by food vendors who hold a permit to operate issued by the Suffolk County Bureau of Public Health Food Protection Unit Updated 8/7/2018 To whom it may concern, I am writing this letter in hopes of getting permission from the powers that be to operate our food truck on our property 5/5/21 aka cinco de mayo and 6/12/21 our third anniversary. The reason I am asking for this special event permit is not because I am having a party, live or amplified music or operating late into the night. The reason I am seeking the permit is because these are out two busiest days of the year and with current COVID regulations in place and 6 foot social distance still the rule, the line for food will be quite long. Im hoping to operate the food truck in our parking lot on the SE Corner of the property where customers would be able to get food to take home. This would allow me to create to lines, lessening the bottle neck in the dining room and allowing for proper social distance. Im sure just like everyone Im writing to seeking permission feel as I do, Id rather not be bothered with this and go back to operating as"normal' but unfortunately,we are not there yet and this is what small businesses must do to survive and respect current state and local regulations. Thanks for taking the time to consider this application and hope to see all of you at Mattitaco for Cinco de Mayo if not sooner.
