It is run by 11`il generation farmers and. as such, we are not new to either the community or farming. So, while our business plan may sound improbable to some, the reality of our farming business is just the same old thing. We plant, we grow, we harvest, we sell our product. We just choose to sell to folks that are dressed in tuxes and gowns. The cut flowers, fruits, and vegetables (pumpkins in whites, greens, blues, pinks and champagne) that we grow are all produced for, and sold to, a very specialized market. The event market. Being on top of colors and trends is extremely important to being successful in this arena. While most of our sales are for events in other locations around the North Fork, South Fork, NYC, Connecticut and RI we do host some events each year on our own farm. These events have two purposes. First, they give us a 12-15 month heads-up on "in" colors and trends that help direct our spring plantings each year. Second, they help finance the new plantings, field lay-outs, and irrigation systems that farming requires. All events take place on land where development rights are intact. All events held on our farmland require, at a minimum, the picking and purchase of flowers, fruit and/or honey. We have no interest in hosting events purely for the sake of the event. We are interested in selling our farm product, building our farm business, and offering guests a beautiful, fun and unique experience along the way. At a minimum the bride and groom must purchase all their flowers from us and have us turn those flowers into a value-added product by having SAF do all their flower arranging. They can choose to "add-on" guest fruit picking in one of three forms: as a recreational pick-your-own activity during the event, as fruit picked prior to the event and worked into the floral arrangements, or as fruit picked specifically for the event menu. Nectarines, peaches, blackberries, apples and kiwis are all available for picking denendiniz on bride choice and season. Brides can also choose to get their guest favors from us. We offer 3 favor choices: (1) ®n-site floral tussy mussies bunched for guests on the spot (2) small packages of wildflower seeds or dahlia bulbs produced from our own fields (3) Honey favors produced in our farm apiary. If they choose honey we either produce and bottle it for them (another value added product) or the couple produces and bottles it themselves by participating in our 6 mos. long bee camp. Participation in bee camp provides couples with both beekeeping skills, and with honey that they produced themselves on an East End farm. And, in the end, SAF gets another colony of bees to add to its apiary. As a multigenerational East End farming family we have strong ties to both the community and the land. We are very interested in protecting both. Since the devil is usually in the details we are careful in the way we implement our business plan so as to protect our farm. our guests. and our neighbors. In General: ® We do not host more than one wedding at any given time. ® Each event is limited to a 6 hour window. ® Events are limited to not more than 300 P_uests. ® We do not allow music to run past Spm. ® We encourage small shuttles and car pooling as much as possible. With regards to parking: • Guest parking is along the east side of New Suffolk Rd. along the edge of a field that is planted in permanent rye cover crop. • The county owns the development rights to that stretch and has granted permission for guest parking under their Chapter 8 PYO code. • Guests travel past neighboring homes and enter at the north end of the field and exit from the south end, maintaining smooth traffic flow and preventing traffic problems. • Cars park at a 45 degree angle along either edge of the field with a roadway down the middle. • The field measures 50 feet wide x 600 feet long easily allowing 90 cars at any given time. • SAF provides a"minimum of 2 parking attendants for every event. • Commercial traffic (trucks and trailers associated with wholesale, tent deliveries, caterers, bathrooms, etc.) all remain on land where the development rights are completely intact. With regards to structures: • We are an outdoor venue. All events take place under tents. • Tent sizes vary with size of event but the following is a good rule of thumb: < 50 guests 30x40 tent 151-200 guests 40x80 tent 51-100 guests 30x60 tent 201-250 guests 40x100 tent 101-150 guests 40x60 tent 251-300 guests 60x80/80x100 *Brides may opt up one or two tent sizes • Caterer tents usually measure 15x15 9 No tent goes up on our farm without a permit With regards to set-up and take down: • Set-up time is weather based on our farm. We are in communication with the tent company and caterer in the early part of the week and the tent goes up any time between Wednesday and Friday based on weather forecast. • We ask set up crews to remain professional with no yelling, swearing, or playing of loud music during assembly and breakdown. • Take down is the day after the event or as soon as weather allows. • There is always at least one SAF employee on hand during set-up and take down to help get any trucks off the road and parked in an expedient manner. • Set-up and take down generally involves 2-3 box trucks and 1-2 pick-up trucks. i -OUNTY OF SUFFOLK r Steven Beiione SUFFOLK COUNTY FXECUTFirE Denartment of Economic Develoument and Fianning Theresa War6t Commissioner Division of Planning and Environment 6U F'F®LK COUNTY FARMLAND cC®MMI`A"g`1 E Abolication#: 2014001 Meeting Date: January 21,2014 tleSt3iulvli rr: i.-:13-LU i= Permit#: PFC 2014014 Dale sued_ L mil 3,'2101 Property Address: 1535 New Suffolk Road, Cutchogue,Town of Southold Tax Man#: 1000-110.00-01.00-001.00;., Pursuant to Chapter 8 of the Suffolk County Administrative Local Laws, permission is hereby granted to WICK IAM HOLDINGS.LLC To install and maintain I) ONE (1) 50 FOOT BY 500 FOOT AREA FOR A DESIGNATED PERMEABLE PARKN-31 AREA.Ti'®BE USED ON AN INTERMITTENT BASIS.ASSOCIATED WITH A lU-P ICI &GRI`:TaT'{LTUPUILL 01PERAT10 I On the above-captioned property, subject to the following conditions: 1.
